While Lower Greenville is waiting on its food trailers, top chefs across the country have named mobile food trucks as a top trend for restaurants. In its “What’s Hot in 2011” survey of more than 1,500 professional chefs, the National Restaurant Association asked them to forecast key happenings in cuisine and operations for this year.

Thirty percent of chefs agreed that mobile food truck restaurants would be the hottest operational trend in 2011. In menu item trends, the need for locally sourced meats, seafood and produce topped the list with 86 percent of chefs identifying this as important. The restaurant trends will be showcased at the 2011 National Restaurant Association Restaurant, Hotel-Motel Show held May 21-24 in Chicago.
