Campo Modern Country Bistro has a new executive chef in Michael Ehlert, and Ehlert’s new menu is now available.

From the media release: “Ehlert’s menu focuses on sustainable proteins, seafood and produce from local farms to prepare innovative dishes with European influences including French, Spanish, Portuguese and Italian.”

Appetizers range from $9 for the smoked tomato and soft leek compote to $21 for the charcuterie board. Parisian-style steak tartare with horseradish dressed greens, pickled ramps and grilled toast is $12.

House-made pastas include gnocchi with shaved parmesan and lemon cream, $15. Pan-roasted chicken with ratatouille is $18. Pear-braised pork with lentils, sausage, frisee and pear mustard is $22.

Ehlert has worked at The Sink Restaurant and Jax Fish House in Boulder, Colo., as well as Brasserie in New York City and The Chesterfield in downtown Dallas.
