Restaurant talk: Deep-fried tea, Ten Ramen delayed, naughty chef

The State Fair of Texas opens Friday, Sept. 26, and here are the Big Tex Choice Awards finalists, including beer funnel cake. Other new foods at the fair this year include pork rind nachos, deep fried milk and cookies on a stick, biscuit fries with chocolate gravy and fried sweet tea. That’s sweet-tea flavored custard in a graham-cracker crust deep fried and served with sweet-tea flavored syrup.

Sylvan Thirty holds its official grand opening next weekend, but Ten Ramen won’t open until next year.
