Smoke chef’s cookbook is out today

SmokeBookcoverStocking your larder, smoking with planks, curing meats and even building your own smokehouse are topics in a new cookbook from Chicken Scratch and Smoke chef Tim Byres.

The book, “Smoke: New Firewood Cooking,” was released today from Rizzoli.

Among the recipes are BBQ beef coffee cure, red onion marmalade, bread-and-butter pickles and goats-milk cajeta, plus tutorials on types of firewood, how to build fires, how to select and smoke chiles and how to dress and stuff a rabbit.

The book includes illustrations from Oak Cliff-based artist Gary Buckner, whom we have featured for his recycled woodworking.

The book costs $25 at Amazon, where it’s also being offered as part of a bundle with East Dallas resident Daniel Vaughan’s “The Prophets of Smoked Meat: A Journey Through Texas Barbecue.”

Buy one for Mother’s Day and one for Father’s Day. Perfect.
