It was so simple and so appealing that it just worked: A grilled-cheese restaurant.

When Dallas Grilled Cheese Co. opened in the Bishop Arts District in January 2015, people loved it immediately.

Now the owners are expanding to a 2,500-square-foot space in Mockingbird Station, on Central Expressway at Mockingbird Lane. They’re taking the space formerly occupied by Smashburger.

“We absolutely love Bishop Arts and have been very conservative in our approach toward growth, but when space inside Mockingbird Station suddenly and unexpectedly came on the market, we knew it was an opportunity we wouldn’t be able to resist,” says restaurant partner Mack Simpson, in a release.  “It will be fun to graft a little quirky branch from Bishop Arts into the Mockingbird Station and SMU neighborhoods. We’re excited to see how it blooms.”

The Dallas Grilled Cheese Co. menu offers 18 varieties of grilled cheese, plus appetizers, soups, salads, desserts and a full bar.

The Mockingbird Station location is expected to open as soon at Jan. 15.
