Eat Tejas, a new restaurant on Bishop at Ninth, opens Wednesday morning, according to the building owner’s Instagram account, @bishoparts.

The restaurant’s Instagram page states, “Tacos, burgers and drinks — that’s all we do, and we call this baby the ‘Burger Done Right.’ We bake our buns in-house and source our wagyu locally.”

The page also says that all of its tacos are made with “organic, locally sourced ingredients,” and that they’ll serve house-made, vegan horchata and Noble Coyote coffee.

They haven’t released an online menu yet, but we hear they’ll have frozen margaritas with flavors like orange and prickly pear, so don’t quit your queso-and-margarita cleanse just yet.

The restaurant is open for breakfast, lunch and dinner and is open from 7 a.m.-9:30 p.m. daily.
