Smash burgers are coming to Elmwood this weekend with the soft opening of Herby’s Burgers at 2109 S Edgefield Ave.

Herby’s Burgers is opening from 4 – 9 p.m. Dec. 29 and 3 – 10 p.m. Dec. 30 with a menu of smash burgers, tots and drinks.

The brainchild of Oak Cliff’s DJ Sober (aka Will Rhoten) and Jake Saenz of Rev’s Grilled Cheese, Herby’s is named after Rhoten’s dog, who has taken on the role of the burger shop’s mascot.

Rhoten, who moved to Elmwood in 2007, told the Advocate he has dreamt of being a part of a “homegrown” neighborhood business for years.

“I always looked at these spaces like, ‘man, that’d be really cool if someone put something there,’” he said. “I really did like the facades of the buildings and liked how it looked and just felt like there was space to do something cool in my own neighborhood.”

Starting Jan. 3, Herby’s will start rolling out a weekly schedule for opening, Rhoten said.

Opening in Bishop Arts this weekend is Jaquval Brewing, a nanobrewery and gastropub created by Bishop Arts legends Jason Roberts and Amy Wallace Cowan. The duo are responsible for opening Oddfellows, AJ Vagabonds and Reveler’s Hall.

Jaquval Brewing will be open from 4 – 11(ish) p.m. Dec. 29 and Dec. 30. at 312 W 7th Street.

A sneak peek menu posted to the brewery’s Instagram story showed four tap beer offerings ($7) and wine options ($11-16). Snacks, such as the Brussel sprouts or blue crab hushpuppies, average around $13 a plate while entrees like burgers or fish and chips hit the $17 range.

While this weekend will mark the soft opening of Jaquval, the store’s next-door neighbor, Trades, is expected to open in January. (Get it? Jaquval Trades?)

Trades, also by Roberts and Wallace Cowan, will be a deli and bakery. The Advocate will update readers when the spot is ready to open.
