The history of smoked meat in Texas is the focus of the annual Foodways Texas symposium in Austin next month. And a couple of Oak Cliff chefs are in on the gastronomy.
Tim Byres of Smoke is participating in the smoked-meat symposium (like, duh) as a speaker.
And chef David Uygur of Lucia will be cooking. (Marvin Bendele of Foodways Texas wrote to say Tiffany Derry of Top Chef season 7 will replace Uygur in the lineup.) Also cooking from Dallas will be Justin Fourton of Pecan Lodge in the Dallas Farmers Market. Daniel Vaughan, the East Dallas-based BBQ snob, also will be speaking.
Tickets for the three-day event cost $250 for Foodways Texas members and $280 otherwise. That includes two lunches and three dinners.
