A new smash burger joint called Herby’s Burgers is going to open soon in Elmwood between Peaberry Coffee’s new location (open this week) and Olmo Oak Cliff.

Going into the burger business together will be Peaberry’s Elijah Salazar, Will Rhoten (DJ Sober) and Jake Saenz (of Rev’s Grilled Cheese).

“The neighbors are kind, supportive, and always looking for opportunities to build community,” Salazar notes. “That made it easy to decide to go into business with my two buddies.”

Interested parties can follow Herby’s on Instagram to stay abreast of progress.

Salazar is opening the second Peaberry at 2105 S. Edgefield this week.

He estimates they probably need about a month to finish up construction on Herby’s.

Salazar opened the first Peaberry Coffee in the Kiestwood shopping center in January 2019.

“I kind of lucked out,” he told the Advocate later that year. “You don’t have to be a derivative of Starbucks. You can have craft coffee and do things the right way, and people will respond.”

As for the burger spot, the guys post that they’re “proud to call Oak Cliff our home and aim to bring a future classic to your very own backyard” and “we can’t wait to feed you!”
