A Mesquite-based bakery specializing in allergy friendly treats is coming to Jefferson Tower next month.

Hannah’s Gluten Free Bakery announced on social media Monday its plans to open a store here in August.

Owner Larissa Wilson started the bakery about five years ago after she was diagnosed with celiac disease, an autoimmune disorder. Gluten, the protein found in wheat, causes damage to the intestines of people with celiac. That means they can’t have anything made with wheat flour.

Wilson’s daughter Hannah also has food allergies, which is why the bakery is nut-free too.

They like going out to eat at the vegan restaurants in Oak Cliff, including Casa del Vegano on Jefferson Boulevard. Wilson’s husband is from Oak Cliff, and she says she thought the boulevard would be the perfect place for her newest venture.

The business was Hannah’s idea, Wilson told the Mesquite News in 2017:

I was lying in bed with her one night and asked, ‘What do you want to do when you grow up?’ She was probably 5 or 6, and she said she wanted to start a bakery for people like her because not only does she have issues with gluten but all nuts, legumes, melons, pineapples, oranges; she has all these food allergies.

Wilson’s family had a tradition of making cinnamon rolls after church, so that was the first gluten-free dessert she learned, and it’s the bakery’s most popular item, she told Voyage Dallas.

The bakery also makes dinner rolls, biscuits, breadsticks, cakes, donuts, cookies and kolaches.
