Veggie pizza

I learned something about myself today. I can eat an entire 10-inch pizza (? EDIT: 12-inch) in a single sitting. Whatever.

NEONY Pizza Works opened Tuesday on Davis at the TYPO. Due to high demand, owner Alex Ham tells customers he promptly was forced disable online ordering and change operating hours.

“We didn’t realize Oak Cliff was so hungry,” he noted on social media. “We implemented online ordering and quickly realized it was a mistake.”

He says they sold out at about 7 p.m. Tuesday. And beginning Wednesday they decided to open from 4-9 p.m., dinner only.

In a note to friends and family invited to the soft opening, operators explained that most of the staffers are young people with limited restaurant experience. “We wanted to hire from within the neighborhood … we are going to make some mistakes.”

When I went in at about 5:30 Wednesday, they were busy but not overwhelmed. Friendly and quick. And the veggie pizza would have been worth a much longer wait.

The NEONY dough is of the hybrid New York/Neapolitan-style 72 hour variety.

The first 24 hours allows the dough to rise and develop airy bubbles before fermenting for the next 48 hours, I learned from the internet. This makes the dough more stretchy and flavorful. Oh, it works. And there could not be a more spongy and delicious vehicle for roasted garlic chunks, tomato slices, mushrooms and red peppers in gooey mozzarella.

Were I a carnivore, I definitely would have tried the Banh Mi pizza with house cilantro aioli, lemongrass sausage, sliced cucumber and pickled carrots. Several other creations to choose from — see here.
