Isla-co.com

In case you haven’t heard, Isla & Co., a New York City-originated eatery with locations in several of the country’s more-affluent and restaurant-dense cities — Williamsburg, NY; Fairfield, CT and West Palm Beach, FL — will open soon in Dallas, at 408 Eighth Street in Bishop Arts. A sign has gone up in the window, and they’ve started hiring staff. Visit Isla-co.com if interested.

It’s the space near Dude, Sweet Chocolate that used to house Lucia, which since moved just around the bend. The folks at Isla say they are aiming for fall 2022 for the Dallas opening.

Executive chef Matt Foley from Los Angeles and who later made a name for himself in New York has honed his skills over the years working at multiple Michelin-starred establishments. (Yes, he is a highly respected chef, not Chris Farley’s man who lives in a van by the river).

Isla & Co. is an Australian-inspired concept described in company literature as an “approachable dining destination in an elevated environment” that specializes, during the daytime, in coffees and brunch dishes and, by night, “cocktail-driven dinners” and a menu that “encapsulates Australian style cooking” with touches of Europe and South East Asia — think “excellent cuts of meat paired with bright flavors alongside vegetable-focused dishes …

“[It’s all] designed to fit the bill for your morning coffee, a mid-week lunch walk-in, an intimate dinner date or a local social gathering spot, providing a convivial eatery boasting healthy, always-fresh, seasonal, high-quality ingredients and dishes, alongside an always engaging service.”

Keep up with them at @islaandco.
