Founders Rosalina and Jesus Galdamez had fled to the United States and Dallas from war-torn El Salvador, according their website.

The family’s stuffed thick tortillas began to create a buzz in the kitchen of a local church, where Rosi made and sold them to raise money for the parish.

“Everyone soon fell in love with them and would suggest [we] open a pupuseria,” the origin story continues. They did just that, in Garland, in 2005.

As the elder Galdamezes were finding success with homemade Salvadoran pupusas and operating one, then two, restaurants in Dallas suburbs, their son, Jose Galdamez, trained at the culinary art school in San Salvador under the tutelage of French master chef Herve Laurent.

Now Executive Chef Galdamez has rebranded his folks’ Rosi’s Pupuseria to ROSI’S Salvadoran Fusion Cuisine, and he just announced yesterday on Facebook that the new Oak Cliff location is coming soon.

Of course those of us here in the neighborhood might have already noticed a sign in the window in the 300 block of Jefferson, across the street from Jack’s Dollar Store.

Along with the original pupusas, which are handmade thick corn tortillas stuffed with varying ingredients, Rosi’s serves an array of Salvadoran dishes — brunch dishes with eggs, chorizo, fried plantains, refrained beans; house specials including steak, chicken and seafood; soups and salads; hot chocolate and horchata; delicious desserts and more.

If you want to try them out before they open the Oak Cliff doors, you’ll have to visit the Garland store. It might be worth it.
